The spreadsheet wasn’t created during the onboarding

If you close the onboarding windows before a Google Sheet is created, you won’t yet be able to add any contacts to the sheet (because it doesn’t exist)! But don’t worry.

The next time you try to add a contact, the window will pop up again, asking you to create a Spreadsheet.
